How Does a Grease Trap Work?
- Wastewater Enters the Trap
- Hot, greasy wastewater from kitchens (sinks, dishwashers, floor drains) flows into the inlet of the grease trap.
- The flow rate is slowed by internal baffles or chambers.
- Cooling & Separation
- As water cools, FOG begins to solidify and float to the surface, forming a grease layer (grease cap).
- Food solids and debris sink to the bottom as sludge.
- Cleaner water remains in the middle layer.
- Clean Water Exits
- The outlet pipe is positioned in the middle layer (below the grease and above the solids).
- Only the clarified middle water flows out to the sewer.
- Grease & Solids Are Retained
- The floating grease and settled solids stay trapped inside until the unit is pumped out and cleaned by a licensed waste hauler.
Maintenance is Critical
- Pump out when FOG + solids reach 25% of total capacity (the "25% Rule").
- Never use enzymes or bacteria — they break down grease into the sewer.
- Scrape plates and use strainers to reduce FOG entering the drain.
Automate this Maintenance Using the GOOP Alarm
The GOOP Alarm system from Alderon can provide notification via suspension probes in the grease trap or oil separator attached to the alarm panel. One suspension probe is placed for reference and a second probe is used to detect the grease or oil level on top of the water.
